The World's BEST Puffy Tacos

These tacos are out of this world!  My just mom shared this recipe with me and since then we have made these 2 times this wk for dinner!  They are easy and really make a difference from the same boring old shells. 

Ingredients:
Oil
Corn tortillas
Meat filling of your choice
Taco toppings (lettuce, tomato, cheese, sour cream, avocado, salsa, etc.)

Recipe

1.  Fill a generous amount of oil (about 1/2 of a 48 oz bottle) in a deep frying pan and heat on med-med high heat

2.  Test oil with a small piece of tortilla to see if the oil is hot enough - should bubble and float to the top easily

3.  Place tortillas one at a time in the hot oil and cook on both sides for about 1-2 mins until tortilla is puffed up - try not to touch the tortilla too much since it will deflate and the puffiness will be effected



4.  Using both a spatula and tongs lightly fold the tortilla in half.  Sometimes I hold my tortilla down in the crease and fry it since this will help shape it.

5.  Let puffy shells cool and drain their excess oil on paper towels.  As you can see the shells will NOT all look the same but that's ok!


6.  Meanwhile, cook your meat while frying the tortillas - this is chicken breasts boiled in several packets of chicken taco seasoning packets then shredded and simmered in onions and the seasonings


7.  After you have fried all your tortillas stuff with your meat and favorite toppings!  Enjoy!

Albertsons Shopping 12/2

Paid $3.38 at Albertsons!!!
Here's How...

(2) EggLand's Best Dozen Lrg Eggs - $1.69 (limit 2)
Used (2) .35/1 Q from 7/31 SS, 10/2 SS, or 11/13 SS (will triple to $1)
Total - .69 each

(6) Allens Canned Vegetables - .59 WYB 10
Used (2) .50/3 Q from 11/20 SS (will double to $1)
Total - .26 each!!!

(4) 15 oz Country Crock Spread - .99 WYB 10
Used (3) .25/1 Q from 11/13 RP (will triple to .75)
Use (1) $1/1 Q from Dec All You Magazine (Exp 12/3!)
Total - 1 for FREE and 3 for .24 each !!!

- .15 discount for bringing my own bags

Final Total = $3.38!!!

Not sure how my total came to that bc my math was off, I estimated my total around $3.50...Since the ink on my recipt is faded I can not read the prices/coupons.  But I'm not going to question a good thing!

***Heads up:  The Allens coupon states limit 1 per customer and they ALL beeped, including the FIRST one I gave the cashier.  He counted my cans and scanned them anyways.  Be sure to grab the veggies that are included in the sale, they should have a little tag advertising .59 WYB 10 with Mega Sale.  I originally grabbed corn kernels and some how these were not included but the creamed corn was???

My sister-in-law, Melany told me about these free nasal strips yesterday at Dollar General!  Many of us missed out on the Walmart overage for these since they are hard to find but this is a great place to use the coupons before they expire on 12/31.  The cashier will have to manually reduce the coupon down from $1.50 off 1 to $1 off 1 since Dollar General will not give cash back or overage towards your purchase.  Thanks Melany!!!

Christmas Spending

Tip #1 - Make a Plan
I think EVERYONE should make  a "plan of action" and budget for Christmas gifts.  Write down all the people you will be purchasing gifts for, what it is you are getting them, and an estimated price for each gift/person.  If money is tight, try to buy 1 gift each wk or for 1 person each wk until Christmas so that the spending is evenly distributed and doesn't all add up at the last minute or cause you to put it on your credit card.  HERE is my original post about how to budget for Christmas. 

Tip #2 - Use Your Stock Pile
If you have a nice stock pile collection, use items for stocking stuffers as gifts to teachers and coworkers.  Items like toothpaste, toothbrushes, gum/candy, razor and face/body products are all great ideas and most of us that coupon have an abundance of some of these items from time to time. 

Tip #3 - Take Advantage of the Deals
Keep your eyes peeled for MIR, daily deal featuring websites, and of course the Christmas sales.  I've already bought a nice crock pot for someone with a $10 MIR making it only $11.50 with shipping.  Right now Walmart has gift baskets HERE or in stores from Olay and Febreeze that featuring a $10-$12 MIR or a 1 yr Allure magazine subscription.  Most of the packages are under $10 with .97 shipping!  The magazine subscription featured below is another great idea for an inexpensive gift.
